What kind of noise does this remove?

Steady, continuous sound: tape hiss, 50 or 60 Hz mains hum, fan and air conditioner rumble. Anything with a constant spectrum across the recording.

Will it remove a door slam or a cough?

No. One-off sounds share their frequencies with speech, so a filter that removed them would take the voice with it. Cut those sections out instead.

Does the voice sound different afterwards?

Slightly. Subtracting a noise floor also thins the quietest part of the voice, which reads as a small loss of warmth. Heavier settings make it more obvious.

What format do I get back?

An MP3. If you need to keep working on the track, denoise last, after any cutting or level changes, so you are not re-encoding twice.
